Not sure what you're saying here. Would you refuse to drive a car without an electronic stability control system?

Not if you have low volume. For instance Caterhams still don't have any driver aids, even the new ones

No, but I wouldn't turn it off (on the road) if it had it. Same with ABS.
My 2006 Civic had E/DSC. It was over sensitive and wore out rear pads, but it was never intrusive to the driving.
Unless a safety aid is intrusive why would anyone turn it off? By intrusive I mean something like the videos of cars refusing to go through small gaps on narrow streets with buses/lorries because of the slow speed emergency braking fitted.

Not being able to switch off rev matching in a manual car would stop me buying it.

AFAIK it's generally not possible to disable ABS except by pulling a fuse. I don't have a car with stability control but have found some that do can be quite intrusive, although some other drivers have said they've not noticed it having an effect when they're driving. Two of our cars have traction control which can be disabled by a dashboard button; I sometimes do this to check that I'm driving the car rather than the electronics.
